Sour Apple Caramel Cookie

There is always that special feeling you get when walk in the door and you smell an apple pie baking in the oven…a warm apple pie immediately gives you a sense that a house is a home.  These cookies do just that, they transform your house to a home!

This cookie has it all, it tastes a little sour, very sweet and a little bit like that “caramel apple lollipop” you grew up loving.  I know you know the one I’m talking about…that sour green apple, caramel lollipop?  So, I was looking for a new recipe to try, something that felt more fall like and voilà…bam…here it is.  I read a bunch of recipes and ultimately modified a recipe to make it my own.

The only change i would make on these is the caramel, I think next time I’ll cut the caramel into tiny pieces and throw it in the dough this way you get a bite of caramel in every bite you take.

Sour Apple Caramel Cookie

Ingredients

  • 1 cup (2 sticks) of butter, softened
  • 3/4 cup sugar
  • 3/4 cup brown sugar
  • 8 (4 oz) packs of apple cider powdered mix
  • 1 teaspoon cinnamon (I did a heaping teaspoon)
  • 2 large eggs
  • 1 tablespoon vanilla extract
  • 2 3/4 cups flour
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • Bag of soft caramels

Directions

  1. In a large bowl, cream your butter with both the brown and white sugar. Beat for 4-5 minutes. While it's beating, in a small bowl, place your apple cider powdered mix with your cinnamon and put aside. And in a medium sized bowl add your flour, salt and baking soda, place that aside as well.
  2. To the creamed butter/sugar mix, add your eggs, one at a time and then the vanilla extract. Once it's completely mixed. Add the apple cider powder mix and mix until well blended. Add the flour mixture and mix until it's well mixed.
  3. Place in the refrigerator for 1 hour. While the dough is in the refrigerator, start unwrapping your caramels, I would then cut them into bits.
  4. Preheat your oven to 350. Fold your bits into the dough and scoop out, I did 36 cookies using my scooper. Bake for 10-12 minutes or until lightly browned.
