Mark’s Amazing Potatoes and Onions

There is nothing better then to have a man cook for you, that being said, I really had a hard time just sitting back and allowing my best friends husband Mark to prepare dinner for us.  I am so grateful that I did step back and allowed him to cook as he proved he was a great cook…and he really spoiled me!  I decided to get away from my area as my kids were with my ex husband and I really needed a little break, I called my best friend Melissa and she offered for my dog and I go come on down and gave me her daughters room for 2 nights.  I really had no expectations but to relax in Brea and really didn’t want to be a burden.

It took me 2 hours to get there and I was worried that I was holding them up, instead both Melissa and Mark greeted me with hugs and we went out to eat.  We went to a place called Cha Cha’s Latin Kitchen it was lovely, Melissa ordered for the table to share the salad, some flautas with a mango sauce and an amazing salmon with a honey chipotle glaze…that glaze was out of this world (don’t think I’m not going to try to duplicate that one)!  I also had a Sangria and if you have been to my house before, you know I love sangria…this one was very tasty and much needed.

For Saturday night, Mark asked me what he can make for dinner, I told him to do whatever he wanted…again, I was spoiled as he did rib-eyed steaks on the BBQ, and Mark is amazing on the BBQ, he did crab legs, broccoli and his amazing potatoes with onions.  The story goes something like this, Marks mom loved to fry food but never fried red potatoes, Mark was camping with his friend Matt (hi Matt) and Matt introduced Mark to this recipe, this recipe is so simple and really you can modify it to your likings by adding bell peppers or any of your favorite vegetables.

First you cut your potatoes into equal pieces, cut your red onions to match your potato size, I’m sorry I don’t have a photo but I didn’t know I was going to blog this.  Then in a frying pan, add your oil, I know it seems like a lot of oil but you will drain it out later.  The ingredients are simple, seasoning salt and Worcestershire sauce.  These potatoes have been cooking for about 8-10 minutes

he cooked it uncovered and tossed them periodically, here they are about 8-10 minutes later, you can see how the potatoes are getting nice and brown and the red onion is getting caramelized.

Once they became tender, he then removed them from the stove top and placed them in a colander to drain off the excess oil

he then put them back in the frying pan and added more worchestershire sauce and seasoning and let them cook for about 8-10 minutes more

Mark’s Amazing Potatoes and Onions

Ingredients

  • 2 pounds Red Potatoes, cut into cubes
  • 1 whole Red Onion, cut into same sized pieces of potatoes
  • 1/3 cup Oil
  • 2-3 teaspoons Worcestershire Sauce or to taste
  • Seasoning Salt to taste

Directions

  1. Cut your potatoes and onions into same type pieces.
  2. Put your oil in a frying pan and let it get really hot, add your potatoes and onions, add 1 teaspoon Worcestershire sauce and your seasoning salt.
  3. Let your potatoes cook through and turn periodically. Keep cooking until the potatoes become soft and browned. Drain your potatoes to remove the excess oil, do this in a colander and put back in the frying pan. Add more Worcestershire sauce and adjust your seasonings with seasoning salt.
  4. Serve and enjoy!

Healthy Easy Baked Eggs

Hey there, I again have to apologize for the lack of posting.  For my friends and family, you all know there has been a lot of change going on in my life and for everyone else all I can do is ask for is patience until I get through the next few months.

Not only is there change in my personal life but I also have met with a nutritionist who changed my whole eating pattern so I’ve been on a strict “diet” but not really a diet just a change of food for my metabolism.  So basically I’ve been eating salmon, shrimp, salads some pasta and other grains.  I’m just figuring out some of my favorite recipes so look out for those!

As you all know, I love to make breakfast and do brunch…I love everything about breakfast from the coffee to the sweet and savory dishes.  I like to experiment with it all and try new things and yet I always try to to do my “tried and true” recipes as well.  The one thing I believe in in entertaining a group, is it’s great to have both the savory and sweet so everyone is happy and anything you can do ahead of time or that does not take away from me enjoying my brunch is even better.

One morning Kelsi and I were just hanging out and we were looking up images on Pinterest for egg dishes.  We had seen many recipes using bacon with eggs and then baked in a cupcake pan, so we decided to create our own recipe for healthy baked eggs by using what we had on hand (we did not have bacon on hand).

This is a great recipe for healthy baked eggs that you can make for a large group and as you can customize it to your own likings as well.  I only made six as it was all the eggs I had on hand but my cupcake pan can do 30.

So basically you take your baking pan and spray it, put your favorite deli meats (I used prosciutto and turkey as it’s what I had on hand) in the pan and cover the pan completely with the meat, 1 per each cup

and then we put the egg on top of the deli meat, yes that’s Kelsi helping me 🙂

This is a great dish to make if you are entertaining and you want something a little personal and unique.  It can be modified to your likings and can be made in large batches.  Your guests will love them, I promise!  Here is another recipe I did for healthy baked eggs!

Easy Baked Eggs for Company or Large Groups

Ingredients

  • 6 large Eggs
  • 6 pieces Deli Meats, your choice
  • 1/2-1 cup Cheese, I used 2 different kinds
  • 1/3-/14 cup Chives, optional
  • seasoning salt, to taste

Directions

  1. Preheat your oven to 400 degrees. While your oven is preheating, spray your cupcake pan with cooking oil.
  2. Take any favorite deli meat and put 1 slice per cupcake mold. Crack each egg separately and add them on top of your deli meat in your cupcake mold.
  3. Add seasoning salt and any favorite toppings (see above). Finish with chives and bake for 10-12 minutes, leaving the yolk firm and runny.
