One Pot Garlic Chicken Recipe

So my daughter is in high school and is on the soccer team, in the last 2 minutes of game time, believe it or not, she sprang her ankle and had to be escorted off the field, she was then carried by two of her teammates to the bench.  After the game, I went to go see if she was ok, she wasn’t.  She could barely step down on her foot…what was I going to do?  I was there with no help really and my daughter needed me…being short, I had heels on of course and had to carry my daughter to my car, which was not very much fun.  What’s that have to do with “one pot chicken”…well because I had gotten home so late, I had to change up what I was making for dinner and ended up making a pretty delicious dish with what I had on hand.

I apologize for the lack of photos but I really didn’t think I was going to blog about this chicken dish, I just thought I’d make it for dinner and everyone would be happy.  But it was so good, I had to write about it…so I only took this one shot…at least it gives you an idea of how it looks, lol…I hope you enjoy it!

One Pot Chicken

Ingredients

  • 1 1/2 pounds Chicken breasts
  • 1/2 cup Flour, you may need more or less to coat the chicken
  • 1 tablespoon Oil
  • 2 tablespoons Garlic, chopped or more if you like more garlic flavor
  • 1/2 pound Mushrooms, sliced in 4ths
  • 1 can Artichoke hearts, cut in 4ths
  • 1/4 cup White wine
  • 1/4 cup Water
  • 2 tablespoons Oil
  • salt and pepper to taste

Directions

  1. Prepare your frying pan by turning your flame on medium high.
  2. Season your flour with salt and pepper, prepare your chicken breasts by cutting them horizontally so that they are thinned out and place them in your flour.
  3. When your pan is hot, place your oil in the pan and put your garlic in the pan, immediately put your floured chicken in your pan. Cook for 3-5 minutes and flip. Cook for an additional 5 min (or more if your chicken is thick, mine was thin).
  4. Remove your chicken and place them on a plate, reserve your drippings. Place your mushrooms in the pan and good for 4-5 minutes, add your artichoke hearts and cook for 1-2 minutes. Add your chicken back to the pan and add your white wine and water (you can add more of both if needed).
  5. Lower your flame and cook for an additional 5-7 minutes. Adjust your seasonings and enjoy!
