I was dating someone from the south who taught me a lot about southern traditional dishes and the simplicity of southern dining. He had many favorite recipes like my chicken spaghetti bake (my number one searched recipe from my blog and super yummy) but his most favorite recipe was pecan confectioners. He didn’t have the recipe so it became the running joke that they even existed as I couldn’t find a recipe for them on the internet. I just figured the cookie or nut was just a recipe that the southerns had from generations prior or they are called something else and one day maybe I’d be lucky enough to try one.

When I was first introduced to baked figs with honey and cinnamon I thought I had died and gone to heaven…they were that good! I was in a restaurant and the baked figs were served on top of vanilla ice cream, as simple as this sounds, it was so amazing I asked the owner of the restaurant how she made them and she was kind enough to give me the basics.
I recently had some friends over for a dinner party where we made a few appetizers, including the apricot appetizer I blogged a few weeks back, some pasta and we finished it off with these amazing baked figs. Everyone loved the whole meal but even still to this day, my friend Bela will bring up the baked figs so I thought it was worthy of posting the recipe.
For this recipe you have to use fresh figs, not dried. Wash the figs, slice them in half and place in a baking pan
top with honey and cinnamon
bake for 30 minutes or until soft (I flipped mine 1/2 way through cooking)
place 3 pieces on a scoop of ice cream, preferably while hot, sprinkle a little sliced almonds on top and serve
Sometimes the simplest things are the best tasting. This is truly an amazing dessert that your friends will talk about long after the meal, just like my friend Bela. Let me know what you think of this?

Lately I have found myself drawn to cold broccoli salads which is a good thing and a bad thing. The good thing about broccoli is that it is a great vegetable to eat with many nutrients (click here to learn more about broccoli), it’s especially great to eat raw…so what’s the bad part about broccoli salad?? Back in September I attended a social gathering and met some really amazing women. I was asked if I would be opened to hosting a gathering at my house to watch the bachelor and of course I said yes. When Monday came and I realized it was time for the show, I also realized I needed a great appetizer to go with the show and knew exactly what to make.
This recipe for dates wrapped in bacon was introduced to me by my friend Susan, she and I taught some cooking classes back in October and she made this dish as an appetizer and I was sold! If you are on a budget, stuff the dates with walnuts, if you can splurge a little use pecans and if you want to go all out try blue cheese. For my party I used pecans because I already had them in my house and I didn’t want to go out and buy walnuts.
You are going to start with dates, that are pitted which leaves a hole in the date, then you insert your filling, for this recipe I used pecans
then you wrap the date in a small piece of bacon, I cut my bacon into 4th’s and you sprinkle some brown sugar on top
you then put them on a baking sheet, lined with foil and I ended up placing the dates on a rack
bake for 20 minutes or until the bacon is cooked through and remove from the oven
if you don’t put the dates wrapped in bacon on a rack, they will cook in the oil and be super greasy as you can see from my first go around and even though I over cooked them, they were still amazing!

Everyone loved this appetizer, let’s face it, who wouldn’t…you get the sweetness from the dates, a secret surprise middle and the salty bacon on the exterior…hello yummy!

This year while having Thanksgiving at a friends house, someone brought a quinoa (pronounced KEEN-wah) with pomegranate dish as a side dish. While bringing quinoa for a traditional Thanksgiving dinner is unusual, I have to say…it was one of my favorite side dishes. One of the things I loved most about the dish was the pomegranates as every time I took a bite, they would pop in my mouth. I went on and on and on about how much I loved this dish but no recipe was given to me, so I took a photo of the dish and re-created it on my own.
