It’s “Scrumptious Saturday”…So for dinner the other night I made some homemade roasted butternut squash and with that dinner I made a chicken dish and some kale coleslaw. I had gotten a bunch of emails asking what chicken I made so I thought today I’d post that recipe as it was pretty amazing!

So my daughter is in high school and is on the soccer team, in the last 2 minutes of game time, believe it or not, she sprang her ankle and had to be escorted off the field, she was then carried by two of her teammates to the bench. After the game, I went to go see if she was ok, she wasn’t. She could barely step down on her foot…what was I going to do? I was there with no help really and my daughter needed me…being short, I had heels on of course and had to carry my daughter to my car, which was not very much fun. What’s that have to do with “one pot chicken”…well because I had gotten home so late, I had to change up what I was making for dinner and ended up making a pretty delicious dish with what I had on hand.
I apologize for the lack of photos but I really didn’t think I was going to blog about this chicken dish, I just thought I’d make it for dinner and everyone would be happy. But it was so good, I had to write about it…so I only took this one shot…at least it gives you an idea of how it looks, lol…I hope you enjoy it!

This was one of those, “omg I have nothing to make for dinner” kind of recipes as I only had chicken out to make for dinner that night and I was unsure of how I wanted to make it.
I check out my fridge and I had just made my sauteed mushrooms the day prior and had them in a container so I thought…”hmmm, I have an idea”. On my stove top was some stock, which had been cooking all day long (I learned how important stock is in a recipe so I tend to always have stock in my freezer, you can always buy a low sodium stock from your market). So, I figured if I used some of the stock and added the mushrooms, I would have been creating a new dinner and I knew it would be one that was pact with amazing flavors
Ultimately, it ended up being one of our favorite dinners! It’s an easy “do ahead” dinner. I have made it for large groups and small groups and everyone loves it…it’s a healthy recipe as well…enjoy!

What I have found is…people have a love-hate relationship with mushrooms, they either love them or hate them. I happen to love mushrooms!
