I love jicama and jicama salad, I was first introduced to it by a live in nanny. I remember the first time she asked me to buy it, I did not even know what jicama was, then when I did buy it, she had to clean it. I was very intrigued as she would eat the jicama with only lemon and salt…I loved it!

As you all know, Kelsi played soccer for her high school last year. It is traditional for moms to host a dinner party to help keep the girls connected, it’s pretty basic…give them carbs! I decided that I would host a party at my house and I had another mom help volunteer. We both made items that the girls would like and let me tell you, we had plenty of options for them. The other mom volunteer provided a “lasagna in a cup” and I loved the idea! The girls loved the idea as well. It was very simple as she took wontons and used the wontons as the dough.
I kept thinking about that lasagna in a cup and really thought I’d make that same dish. So much for that thought, I was hosting a little bbq and thought I’d change it up a little and made more of a Mexican taco in a cup as a side dish or appetizer. I can share that everyone loved them.
I start off by taking my turkey and placing it in a pan with my oil
I brown it all up
and then I added my favorite taco seasonings
add your favorite salsa to your cooked and seasoned turkey
add your refried beans and 6 oz of chicken stock
stir well
cover your pan and let it all cook until most of the stock evaporated, look how rich that looks!
take your wonton wrappers and put them in your prepared cupcake pans
put some of the cooked turkey on top
add some cheese
put a second layer of wontons on top
add more of the turkey and cheese
bake in your preheated oven until the edges brown on your wontons here is the before

and here is how it looked when I topped it with a little sour cream and chopped tomatoes

It’s a great recipe because you can serve it as a side dish or appetizer. I took the leftovers and put them in a container and then when my kids came home from summer school, they would pop them in the toaster oven or microwave.
