I was not raised celebrating St. Patrick’s Day and this year I will not be around to make a dinner so I wanted to remind you about this old post of mine for St. Patrick’s day for Irish Soda Bread…I do love the recipe. I am not familiar with other recipes for Irish Soda Bread but my recipe has zest of orange to help sweeten the bread and it does not have yeast.

Every year for Mother’s Day, my children make this healthy stuffed French toast with raspberries for me. I found the recipe long ago, made some modifications and then asked them to make it, on their own, and I have loved it ever since. My children usually use only fresh raspberries but you can add blackberries or strawberries as well.
Whip the eggs with milk, honey and cinnamon
remove the crusts from the bread
dip the bread into the egg mixture
place the bread into a muffin tin and press gently into the muffin tin to form the cup, do this for each piece
bake and remove from the oven, meanwhile, in a small bowl mix your ricotta cheese with orange zest
add a small amount of the ricotta cheese to each cup
add the fruit and serve
Not only is this recipe a little healthier than the traditional stuffed french toast, it also is beautiful when served. Whether you make this for your mom on Mother’s day or just because, I know you will enjoy this recipe, especially if you are looking for something a little healthier…Enjoy!

I love halloween and decorating our house had always been a ton of fun, we always went a little crazy in our decorations as we would create a graveyard theme and we really got into it. We would have the skeletons, lights and even the fog, the poor little children that came to our house, some of them wouldn’t even ring the door bell.
We did do carved pumpkins every year as well
Sometimes we did have some fun with the skeletons and just placed the skeletons on the hammock…during the day
but at night…it was a whole other story
but I was not a big fan of halloween decorated food and drinks as I was always in a rush to get decorations displayed. I had done some very basic things like dry ice in a drink of punch
but honestly that’s as creative as I ever got for food decorations and being Italian, I’d always have enough homemade pizza (but it’s not very halloween’ish)
