What a treat for you all…recently I was looking through old recipes and stumbled upon an oldie but a goodie, one pot chicken with artichokes and fettuccine. I was given this recipe over 20 years ago, when I lived in Portland, Oregon and I made this chicken dish all the time, especially when I was entertaining.

YUM, I love this recipe, cranberry punch for adults! Look everyone knows that I was never the drink master in having my parties, my ex husband was amazing at making drinks for the adults and I made the food. That’s why I am so excited to share this amazing drink with you as it’s super easy to make, it’s made in advance and it’s self serving (I always recommend having a self serving drink for a party so the host can enjoy the evening instead standing around and making the drinks).

Noodle kugel is a traditional Jewish dish made for Rosh Hashanah and I have to admit that the first time I tried noodle kugel, 22 years ago, I didn’t like or understand it. Being Italian I only understood pasta to be savory not sweet and with noodle kugel you are definitely getting a sweet, pudding type of a casserole recipe.

It has been almost 2 years since my girlfriend Susan and I did a catering job for a friend of ours. We did baby shower luncheon menu with a cheese platter, hummus, vegetables, rice, salad and my famous chicken piccata with artichokes. I have been reluctant to share this recipe for chicken piccata as it was something I remember my mom making and really it’s not an exact measuring type of a recipe for me so keep that in mind when you make it. Also when using fresh lemons in cooking, remember you never know how tart the lemon is or juicy so you may have to modify the quantity for that as well.

Saint (St.) Patrick’s Day was never a big holiday in my Italian household but it was always a great day for me because of my mom. My mom had always made St. Patrick’s Day special for me because I was her only child without an Italian name. To make me feel special, my mom would always buy me a little something or do something special on St. Patrick’s day to make up for it so while it was not about the food and what was being made it was about how she made me feel important.
I don’t tend to do a lot of Irish cooking, although I can cook just about anything, I just don’t tend to gravitate to Irish food, even for the holiday. I decided that I would revisit an old recipe I had for Irish soda bread and so I found this on from my collection.
I’m unsure of more traditional recipes or if this is the traditional recipe but I will tell you that I love this recipe, maybe it’s the orange zest which brings in the Italian feeling or the currants that make it a little sweet but not overly sweet, or maybe it’s just such a simple recipe that I love that I can whip it up and serve it to impress my friends…nonetheless, it’s a great recipe to try at least once in your life as it’s a no fail recipe for bread that doesn’t use yeast.
I didn’t have buttermilk at home so I made my own, you have to use 1% or higher for your milk and for every cup you add 1 tablespoon lemon or distilled vinegar, I did almost 2 tablespoons, here is my before
then after 5 minutes with the vinegar it looks like this, kind of gross but it works
you add your flour, sugar and baking soda in a bowl
cut up your butter into cubes
add it to your flour
mix until you have small bits and pieces of the buter
to your milk add the orange zest and lightly beaten egg
add your milk to your flour and mix well
add your currants and mix well
dump your mixture onto a floured counter, here is the before
knead for about 3 minutes…here is your after
place on a prepared baking sheet with parchment paper and cut a “cross” with a knife
baked for 45-55 minutes or until done
Let it cool slightly before cutting
I couldn’t wait to cut into this bread and I’m glad I couldn’t it was amazing! I’d say give it a try as it’s not a difficult recipe and it’s always impressive to make your own bread. I would not substitute the currants or orange zest.

It’s the holidays and when better to splurge on eating chocolate, cakes and cookies??? That’s what New Years resolutions are all about, losing the weight from the holiday festivities. I was going to a Christmas Day party and was asked to bring a dessert, I thought I’d be original and make a chocolate cake thinking chocolate would be original. I was wrong, chocolate was the main ingredient for all the desserts, there were chocolate covered pretzels, chocolate cakes, brownies and cookies, silly me.
Nonetheless, I tried this recipe and I have to say it was very good and super easy to make. The “death by chocolate” comes from 3 different types of chocolate, chocolate cake mix, chocolate pudding and chocolate chips, does it get any better than that? The recipe I found was on food.com and I did modify the recipe by the espresso powder, if you do not have expresso powder you can use instant coffee or you can just omit the coffee altogether, the coffee brings out the flavor of the chocolate, I even use it in my Red Velvet Cake (secret ingredient :))
You basically put your eggs, water, oil and sour cream in a bowl
then I creamed them until they were light in color
I added the cake mixes
mixed really good and added my chocolate chips (I folded the chocolate chips in)
I thought it would be nice in a bundt pan
I put it in the oven and baked it for about 48 minutes and here it is…YUMMY!
Do not follow the cake package instructions for this recipe as this is a modified recipe. I filled my centers with chocolate wafer cookies but for valentines, you can fill them with chocolate kisses. I’m not a huge bundt cake person but I liked how it looked…I will note changes to my next bundt cake recipe a I did learn a few things.
