I just purchased this new book called “Sweets“, it was on Amazon with over 67 customers rating it 5 stars. It’s a cookbook for desserts with the recipes originating from the south. I’m not as familiar with “soul food” or foods from the south but I’m intrigued to learn it as I have found that everything from the south is truly amazing.
If you are looking for a non traditional birthday cake, that is sweet and unique…this is your cake! I would recommend doing the “Cream Cheese Glaze” 1 1/2 times as I felt that there was not enough for the sides. I am posting the recipe as it is written in the book as I followed this recipe as is.
I have a few friends with birthdays today and I wanted to post this for them!
Ingredients
- 1 cup Butter, softened
- 2 cups Sugar
- 5 large Eggs
- 1 box Graham crackers, crushed into crumbs (16 oz)
- 2 teaspoons Baking powder
- 2/3 cup Milk
- 4.5 oz Cream of coconut
- 1 cup Chopped pecans
Directions
- Lightly grease three 9" round cake pans. Set them aside.
- Cream the butter and sugar in a large bowl. Blend until the mixture is very light and fluffly. Add the eggs one at a time, beating after each addition. Add the graham cracker crumbs and baking powder to the mixture, alternating with the milk. Blend in the cream of coconut and the pecans until the ingredients are evenly distributed. Bake in the prepared pans for 35-40 minutes. Allow the layers to cool in the pans on wire racks for 10 minutes, then unmold the layers onto the wire racks to cool completely.
