I have made this recipe for stuffed pasilla pepper super simple by using leftover quinoa and then adding fresh shrimp! A few weeks ago I shared my quinoa with grilled vegetables recipe with you, it had quinoa, roasted tomato, mushroom and onions. So, today I’m using the leftover quinoa to create a “new” dish and I know you will love it!

Who would of thunk…I had some zucchini/squash that was going bad and had to make them for dinner. I remembered my best friends husband Mark (he also made potatoes and onions for me) always made me zucchini/squash on the bbq, Mark would season the zucchini/squash, wrap the zucchini/squash in aluminum foil and let them cook for about 20-25 minutes. I always loved Mark’s zucchini/squash on the bbq.

Cauliflower has been the big “switch out” when it comes to eating healthy or gluten free. I know I substituted cauliflower for potatoes for a dinner party recently and while I could taste the slight difference, it wasn’t so bad that I wouldn’t do it again. Cauliflower pizza crust has been popping up on all my food sites for over a year now and I have been meaning to try it but it looked like a lot of work so I have been passing. One year later and a detox motivated me to try a recipe for cauliflower pizza and I am glad that I did try it….
