Smoked Shrimp with Orange Achiote Recipe

It’s been so hot here in California and making dinner is not something I’ve been wanting to spend a lot of time on so I apologize for the lack of “cooked” items lately, as I’m more about side dishes and snacks.  I’ve also been doing quick cook dinners and usually it’s not something I plan for I just make…for example this smoked shrimp with achiote, I literally planned and cooked it all in less then 30 minutes.

Achiote is the paste I used for my chicken with achiote, it’s not spicy at all but adds a lovely flavor to most meats and fish, you can find it here in California in the Mexican aisle.  I was originally introduced to achiote in cooking school, using it on shrimp and I always keep it on hand.  I tend to pair orange zest with the achiote as I think it enhances the flavor.

I used my smoker for this recipe so the instructions and photos are directed in using a smoker.  If you don’t have a smoker, you can BBQ your shrimp or you can bake your shrimp or you can even cook your shrimp in a pan so no worries there.

I basically added my achiote paste with my oil, orange zest and garlic…I apologize for the photo, I didn’t realize how bad of focus it was until it was too late 🙁

you add your shrimp to the mix, toss your shrimp and let it marinade for 10 minutes or so

while it’s marinating, you prepare your smoker by adding the flavored chips you like, I also added the peel of my orange

I laid the shrimp down on a single layer and covered, turn the flame to high and let it smoke for 10 minutes or so

I then turned the smoker off and let it sit (with the cover on) for about 8 more minutes…YUMMY, doesn’t it look amazing

This is a super easy, last minute dish that everyone will love.  Again, if you don’t have a smoker, bake them in your oven or BBQ them out back or cook them in a pan on your stove top.

Smoked Shrimp with Achiote

Ingredients

  • 1 pound Shrimp, shells left on
  • 2 tablespoons Achiote Paste
  • 1 tablespoon Garlic, chopped
  • Zest from one Orange (save the peels for smoker, if using smoker)
  • 2-3 tablespoons Olive Oil
  • Salt and Pepper to taste

Directions

  1. Place your achiote, garlic, orange zest and olive oil in a bowl and mix until well combined. Add your salt and pepper and allow to sit out for 10-15 minutes at room temperature before cooking.
  2. Add your shrimp to the achiote paste.
  3. Smoker - If you are using a smoker, prepare your smoker with your favorite chips, I also used the orange peel, place your shrimp in and place your smoker on your stove top and turn your flame to high. Cook for 10 minutes, turn off your flame and keeping your smoker closed let your shrimp rest for an additional 8 minutes or until cooked.
  4. Oven - If you are using the oven, preheat your oven to 350 degrees, place your marinated shrimp on a foil lined sheet, single layered and bakes for 10-12 minutes or until cooked through

Roasted Tomatoes with Garlic

It’s “Scrumptious Saturday” and I have such a great recipe for you…again!  With tomatoes coming into season, I thought I’d do a roasted tomato dish.  When I grew up in Connecticut, my father was always doing a vegetable garden.  He took a lot of pride in his vegetables and he tried all the old wives tales in improving the soil.  I can remember him going fishing and taking the bones and digging them in the ground in preparing the soil for seeding.  All I knew is that we always had the best tasting vegetables ever and an abundance of them as well.

This is such an easy recipe and delivers so much reward.  You can use the roasted tomatoes in a sandwich, on pizza, you can pulse it and use int as a spread or on top of cheese…you can even use the roasted tomatoes, whole or pulsed…tossed in pasta.

I was at my local Trader Joes and they had cherry tomatoes in both red and yellow so I bought some of each.  I don’t have exact measurements for you but I’m sure you will be able to make the recipe your own by making the appropriate adjustments.  I preheated my oven to 350 degrees and put my tomatoes in a pan.

I then put some chopped garlic, thyme and olive oil

I put it in the oven for 45 minutes… looks like a lot of oil now but really I didn’t add any more from the original recipe, think it’s all the juices.

even though the tomatoes looks like they had cooked up a bit, they weren’t quite where i needed them so I put on my broiler and broiled them for about 5 minutes, I then removed the stems of the thyme.

So delicious and with the tomatoes coming into season, you will find the sweetness of the tomato…if the tomatoes are not in season, they will not be sweet and a pinch of sugar will help.

Roasted Tomatoes with Garlic

Ingredients

  • 2 cups Cherry tomatoes (red or yellow or both...if not in season add a pinch of sugar)
  • 2 tablespoons Oil
  • 2 teaspoons Garlic, chopped
  • Thyme sprigs

Directions

  1. Preheat your oven to 325 degrees.
  2. In a baking pan, add your tomatoes, drizzle oil on top add your chopped garlic and add the whole thyme sprigs. Bake for 45 minutes.
  3. If you are content with your roasted tomatoes, remove them from the oven and enjoy. For me, I like the charred tomatoes so I put mine back in the oven and broiled them for 5 minutes.

Rapini with Garlic

It’s “tasty Tuesday” and I’m gonna tell you all about Rapini (also known as Broccoli Rabe)…are you familiar with rapini?  Rapini is something I grew up with and I just love, love, love love it.  It’s definitely has a unique flavor and you may even say it tastes bitter.  I will explain how to remove that bitter taste later on so make sure you read the whole post if you are brave enough to make rapini.

I remember when we first moved from Connecticut to California my mother and a cousin would “find” these open fields with rapini growing wild, we’d all get out of the car and quickly cut as much as we could before we would rush off.  I would saute some and make a “pizza pocket” type of a snack out of the rapini.  What I mean with regards to the pita pocket is is that I would roll out some dough, put some of my rapini (the way I’m demonstrating today) and then fold over the dough, seal it and bake it.  It was something my grandmother would make for us growing up and I still make and love today.  I made this dish as part of our Easter dinner as I love the way it compliments ham.  You can also make some and throw it over pasta…OMG it’s so good that way!!!

Ok for my recipe, I used 2 bunches of rapini from the market (when you are buying rapini, do not buy the bunches that have yellow flowers as that means that the plant is older and more bitter and if the market doesn’t have any without the flowers, I’d pass on buying it).  Rapini is like spinach when you cook it, starts off looking like you will have tons and then as it cooks, it withers down to nothing.  So if you are trying it out for the first time, you can purchase 1 bunch but be prepared you will not have an abundance.

Anyway, I took my first bunch and cut off the ends from the bottom of the stems, I then cut the rapini into 1 1/12 inch pieces

I wash it in my sink like I would lettuce and remove as much water as possible.

I then put my oil in a pan and add my red pepper flakes

I walked away for like a second and ended up burning my first batch lol so lesson learned…don’t walk away!

I basically cleaned out my pan and started over by putting my oil in my pan and then the red pepper flakes, I then added my chopped garlic

be careful at this next step…I then I added my rapini to my pan…see how high it starts out?

and when it’s completely cooked…and remember I did 2 bunches

If you find that the rapini is too bitter for you, you can boil it as boiling it will remove most of the flavors and nutrients.  If you boil it, I would recommend putting olive oil, garlic, salt and red pepper flakes on top and serve.

Ingredients

  • 2 bunches Rapini
  • 2 tablespoons Canola oil
  • 1 teaspoon Red pepper flakes (more or less to taste)
  • 2 teaspoons Garlic, chopped
  • salt to taste

Directions

  1. Cut your rapini into 1 1/2" pieces and wash thoroughly.
  2. In a fry pan, put your heat to high and add your oil and red pepper flakes (watch it or it will burn), add your garlic. Add your cut rapini and cook uncovered for 4-6 minutes.
  3. Toss your rapini and cook for an additional 4-6 minutes.
  4. Toss again, cover and cook until it's tender. Can be served hot or cold.

Amazing Garlic Bread Recipe…my way!

It’s “Scrumptious Saturday” did you think I’d forget?

I’m sorry for the late post but today is also my daughters birthday.  So I must say that while most people are preparing for the Super Bowl with lots of appetizers…like hot wings, dips and sandwiches, I have a house filled with girls wanting pizza, salad and cake.  So I thought I’d have a little fun by making some garlic bread (my way).  While at the market I found a sourdough bread, it had a nice hard crust and thought it looked fine for what I wanted to try.

I cut preheated my oven to 350 degrees and sliced my bread.  In slicing the bread, I did it without cutting the bread all the way through so it looked like little cubes.

I then melted some butter and added garlic, since it is garlic bread and then added some Parmesan cheese

I had some monterey jack cheese that I sliced and stuck in between my sliced bread (I’m hoping the visuals are helping as I’m struggling describing this one for some reason…lack of sleep maybe lol)

I ladled the melted butter, garlic and Parmesan cheese on top of the bread….see where this is going??? lol  I wrapped the bread with aluminum foil, placed it on a baking sheet and baked it for 15 min or so.

I took it out and checked to see if the cheese was melted, not quite where I wanted it.

I uncovered it and baked it for an additional 12 minutes or so…YUMMY…the kids loved it!  and I have to say…so did I, I hope you do as well, enjoy!

Amazing Garlic Bread…my way!

Ingredients

  • 1 loaf Bread
  • 1 stick Butter
  • 2 tablespoons Garlic, chopped (or more if desired)
  • 1/4 cup Parmesan cheese (or more if desired)
  • 1 package Monterey jack cheese, sliced thin

Directions

  1. Preheat your oven to 350 degrees.
  2. Slice your bread into cubes carefully not to cut through to the bottom. Add your monterey jack cheese between the sliced bread.
  3. Melt your butter and add garlic and Parmesan cheese. Once melted, ladle your melted butter, garlic and Parmesan cheese over the bread and cover with the aluminum foil.
  4. Bake for 15 minutes, remove from the oven, uncover and place back into the oven for an additional 12-15 minutes or until the cheese is bubbly and bread is crusty.
  5. Try and resist eating straight from the oven try and let it cool, if you can, as I can not be liable for burnt tongues or roof tops

One Pot Garlic Chicken Recipe

So my daughter is in high school and is on the soccer team, in the last 2 minutes of game time, believe it or not, she sprang her ankle and had to be escorted off the field, she was then carried by two of her teammates to the bench.  After the game, I went to go see if she was ok, she wasn’t.  She could barely step down on her foot…what was I going to do?  I was there with no help really and my daughter needed me…being short, I had heels on of course and had to carry my daughter to my car, which was not very much fun.  What’s that have to do with “one pot chicken”…well because I had gotten home so late, I had to change up what I was making for dinner and ended up making a pretty delicious dish with what I had on hand.

I apologize for the lack of photos but I really didn’t think I was going to blog about this chicken dish, I just thought I’d make it for dinner and everyone would be happy.  But it was so good, I had to write about it…so I only took this one shot…at least it gives you an idea of how it looks, lol…I hope you enjoy it!

One Pot Chicken

Ingredients

  • 1 1/2 pounds Chicken breasts
  • 1/2 cup Flour, you may need more or less to coat the chicken
  • 1 tablespoon Oil
  • 2 tablespoons Garlic, chopped or more if you like more garlic flavor
  • 1/2 pound Mushrooms, sliced in 4ths
  • 1 can Artichoke hearts, cut in 4ths
  • 1/4 cup White wine
  • 1/4 cup Water
  • 2 tablespoons Oil
  • salt and pepper to taste

Directions

  1. Prepare your frying pan by turning your flame on medium high.
  2. Season your flour with salt and pepper, prepare your chicken breasts by cutting them horizontally so that they are thinned out and place them in your flour.
  3. When your pan is hot, place your oil in the pan and put your garlic in the pan, immediately put your floured chicken in your pan. Cook for 3-5 minutes and flip. Cook for an additional 5 min (or more if your chicken is thick, mine was thin).
  4. Remove your chicken and place them on a plate, reserve your drippings. Place your mushrooms in the pan and good for 4-5 minutes, add your artichoke hearts and cook for 1-2 minutes. Add your chicken back to the pan and add your white wine and water (you can add more of both if needed).
  5. Lower your flame and cook for an additional 5-7 minutes. Adjust your seasonings and enjoy!
