Battered Chicken (Baked not Fried)

I am going to share a little more about my personal life then I have in the past…5 years ago my ex husband and I began our journey in getting a divorce and we began it by separating.  At that time it was one of the hardest things I had ever gone through as it was the start of me losing everything I knew my life to be.  Over the next 5 years I lost friendships I thought I would have forever, I lost my home and I lost a family that I was part of for over 20 years.

Because of my divorce, a friend and I have begun to help other women in going through divorce to face some of the unforeseen issues, the hurt, betrayal and things that no one prepares you for.  In providing help to other women we have learned that no matter what our own situation is, there are common stories and a special bond with these women and I feel fortunate to be helping them and what they don’t realize is that they are also helping me.  If you would like to learn more about my other adventure follow me at www.UnFrozenDesires.com, don’t forget to subscribe there.

I will be doing a series of food recipes to bring in some humor and great recipes, which recipe will represent what I have learned from these women with the first in the series being “battered chicken”.  I have found so many women feeling beaten and battered during and after their divorce, I speak from my groups which are currently all women and I mean no disregard to men but my current experience has only been with women.

When one goes through a divorce there seems to one person that lashes out and becomes a bully, either with their tongue or physically.  Every time the bully (your ex) shows up, either in a call or physically and they beat their partner up by bullying them, this allows your ex to feel empowered; as they know this is the only way they can still impact you in controlling them.  I always said the true identity of a man is not during the marriage but during a divorce.  For all those women stuck in a marriage of an abused man, the bully who beats you down to make him look and feel better and yet to his friends and inner circles he’s the victim, I am so sorry.  I have learned that leaving that kind of a marriage is not easy, as it has become the only life you have known and so the life you have accepted.

This is why I decided to make the perfect recipe “battered chicken” for all those women who feel beaten and battered by their ex…this method of making battered chicken was given to me when I was 16 years old and dating an ex boyfriend, his mom, Donna shared this simple trick that kept my battered chicken so moist and delicious that I had never forgotten it.  There is a trick to is, what is that trick?  Putting your chicken in buttermilk, breading it and putting it in the refrigerator for a  few hours, in doing so you will have the most moist battered chicken and you will not miss the chicken being fried!

Do not skip a step in this recipe for battered chicken as each step allows the battered chicken to stay moist and delicious:

Remove chicken breast from the refrigerator

Chicken Breasts

Place in your buttermilk I added tabasco sauce to my buttermilk

Chicken Buttermilk

coat your chicken with bread crumbs/panko

Chicken

place the coated chicken in the refrigerator for at least 2 hours

Chicken on tray

bake for 35-40 minutes or until the internal temperature is 165

Chicken Baked

serve immediately, I sliced my chicken to make it easy to serve

For those parents that work, this is a great recipe as you can keep the breaded chicken in the refrigerator all day while you are at work.  When you get home, all you need to do is to preheat the oven, remove the chicken from the refrigerator and bake until cooked through….super easy!

Battered Chicken (Baked not Fried)

Ingredients

  • 1 pound Chicken Breasts, skins removed
  • 1 cup Buttermilk
  • 1/2 cup Panko
  • 1/2 cup Bread Crumbs, or 1 cup if you are not using Panko
  • 1 teaspoon Italian Seasonings
  • 1 teaspoon Salt
  • 1/2 teaspoon Black pepper
  • 1/2 teaspoon Garlic Powder
  • Tabasco Sauce, to taste (optional)

Directions

  1. Place your chicken in a bowl and pour your butter milk over it, if you would like add the tabasco sauce to this. Make sure the chicken is coated with the buttermilk.
  2. In a separate bowl add your panko, bread crumbs, Italian seasonings, salt, black pepper and garlic powder. Mix well.
  3. Add your chicken, one by one to the bread crumb mixture and make sure the chicken is well coated with the bread crumb mixture. Place the coated chicken on a baking sheet.
  4. Place the baking sheet in your refrigerator for a minimum of 2 hours or up to 24 hours.
  5. When your chicken is ready to be baked, preheat the oven to 400 degrees, bake your chicken for 18-28 minutes (depends on the thickness of the chicken) or until the internal temperature is 165 degrees.
  6. Serve Immediately. Enjoy!

Latkes for Hanukkah

I know, “What is an Italian girl like me doing making latkes?”  Being raised Italian, I was never exposed to the Hanukkah or the traditions of Judaism until I was married to my ex husband who was Jewish.  Being the good wife, I emerged myself in learning every Jewish holiday and tradition, of course that meant learning everything about the food.

For Hanukkah, at our home, I would always stick to the traditional dinner of a roast, latkes, challah and a salad.  I will not get into the religious side of the holiday (click here if you would like to learn about the holiday) but will share that the holiday is basically about oil and when it comes to the food it’s about the food being cooked in oil.

I love latkes which are basically shredded potatoes with shredded onions and then the latkes are fried in oil and served with apple sauce and sour cream, who wouldn’t love that?  Being Italian, I always had to bring in my element into every dish I could, so for me, I would add rosemary to my latkes; over time I would add sweet potatoes…so in essence I have created my own version of an Italian Latkes.

For me I used a sweet potato for this recipe here is a photo of a sweet potato

If you can not find a sweet potato in your market, use a yam (some markets call yams sweet potatoes but they are completely different in texture, color and taste), here is a photo of a yam

I took my potatoes and sweet potato and peeled them, as you can see the sweet potato is whiter then the regular potato

I then shredded them in my food processor, I also cubed 1/2 of an onion and minced it in my food processor, here is the before

I placed the potatoes and minced onions in a strainer and liquid strain out for about 30 minutes while I minced my rosemary

I put all my ingredients in a bowl and mixed until it was all blended

then I shaped my potatoes into latkes and placed them onto a baking sheet

I prepared my oil over high heat and added 5 latkes to the pan at a time, cooked them until they were lightly browned and flipped them to brown on the other side

Frying

I removed my latkes from the skillet and placed them onto a paper bag from the grocery store, my friend Robyn taught me this trick as it removes the oil from the latke

I plated it and added the traditional sour cream and apple sauce

These latkes were amazing and we just loved them.  You can omit the sweet potato and rosemary and stick to your traditional recipe but I can assure you that if you put these Italian version out on your table, they will all disappear.  For those who have a Trader Joes in your neighborhood, they sell latke’s in the frozen section and that makes for an easy dinner as well.  Now there is no excuse as to why you can not have a latkes at your next Hanukkah dinner.  Happy Hanukkah

Latkes for Hanukkah

Ingredients

  • 2 medium Potatoes
  • 1 medium Sweet Potato
  • 1/2 cup Onion, finely chopped
  • 1 large egg, lightly beaten
  • 1 teaspoon salt
  • 2 tablespoons Rosemary, Minced
  • 1/2-3/4 cup Flour (depends on how wet your potatoes are)
  • 1/2 to 3/4 cup Oil

Directions

  1. Peel your potatoes and using a food processor shred your potatoes, if you do not have a food processor, you can grate them by hand. Place your peeled potatoes in a strainer.
  2. Chop your onions and place in a food processor and mince them, add them to your strainer of potatoes and strain for 30 minutes, press out as much water as you can.
  3. In a large bowl add your potatoes, onions, egg, flour, rosemary and salt. Mix until well blended.
  4. In a large skillet, heat your oil, while your oil is heating up, shape your latkas and place them on a baking sheet. Place 4-5 latkas into the hot oil and fry until lightly browned, flip and cook the other side. Remove from the oil and place onto a paper bag or paper towel.
  5. Serve immediately with apple sauce and sour cream. Enjoy

Mark’s Amazing Potatoes and Onions

There is nothing better then to have a man cook for you, that being said, I really had a hard time just sitting back and allowing my best friends husband Mark to prepare dinner for us.  I am so grateful that I did step back and allowed him to cook as he proved he was a great cook…and he really spoiled me!  I decided to get away from my area as my kids were with my ex husband and I really needed a little break, I called my best friend Melissa and she offered for my dog and I go come on down and gave me her daughters room for 2 nights.  I really had no expectations but to relax in Brea and really didn’t want to be a burden.

It took me 2 hours to get there and I was worried that I was holding them up, instead both Melissa and Mark greeted me with hugs and we went out to eat.  We went to a place called Cha Cha’s Latin Kitchen it was lovely, Melissa ordered for the table to share the salad, some flautas with a mango sauce and an amazing salmon with a honey chipotle glaze…that glaze was out of this world (don’t think I’m not going to try to duplicate that one)!  I also had a Sangria and if you have been to my house before, you know I love sangria…this one was very tasty and much needed.

For Saturday night, Mark asked me what he can make for dinner, I told him to do whatever he wanted…again, I was spoiled as he did rib-eyed steaks on the BBQ, and Mark is amazing on the BBQ, he did crab legs, broccoli and his amazing potatoes with onions.  The story goes something like this, Marks mom loved to fry food but never fried red potatoes, Mark was camping with his friend Matt (hi Matt) and Matt introduced Mark to this recipe, this recipe is so simple and really you can modify it to your likings by adding bell peppers or any of your favorite vegetables.

First you cut your potatoes into equal pieces, cut your red onions to match your potato size, I’m sorry I don’t have a photo but I didn’t know I was going to blog this.  Then in a frying pan, add your oil, I know it seems like a lot of oil but you will drain it out later.  The ingredients are simple, seasoning salt and Worcestershire sauce.  These potatoes have been cooking for about 8-10 minutes

he cooked it uncovered and tossed them periodically, here they are about 8-10 minutes later, you can see how the potatoes are getting nice and brown and the red onion is getting caramelized.

Once they became tender, he then removed them from the stove top and placed them in a colander to drain off the excess oil

he then put them back in the frying pan and added more worchestershire sauce and seasoning and let them cook for about 8-10 minutes more

Mark’s Amazing Potatoes and Onions

Ingredients

  • 2 pounds Red Potatoes, cut into cubes
  • 1 whole Red Onion, cut into same sized pieces of potatoes
  • 1/3 cup Oil
  • 2-3 teaspoons Worcestershire Sauce or to taste
  • Seasoning Salt to taste

Directions

  1. Cut your potatoes and onions into same type pieces.
  2. Put your oil in a frying pan and let it get really hot, add your potatoes and onions, add 1 teaspoon Worcestershire sauce and your seasoning salt.
  3. Let your potatoes cook through and turn periodically. Keep cooking until the potatoes become soft and browned. Drain your potatoes to remove the excess oil, do this in a colander and put back in the frying pan. Add more Worcestershire sauce and adjust your seasonings with seasoning salt.
  4. Serve and enjoy!
