Healthy Baked Eggs with Pesto

WOW…it has been almost 2 years since I last did baked eggs in a tin recipe and while I loved by baked eggs two years ago, I love these baked eggs even more.  Why is that you may ask, well, I have had some healthy issues recently and decided to change my eating habits wherever I could.  My original recipe included cheese, prosciutto, scallions and other choice ingredients, for this recipe I simplified and made it a little healthier, I used ham (or turkey), a small amount of pesto and that’s it!  It’s the same concept as my original recipe and here is how I did it!

Just like my other recipe for baked eggs, I placed a piece of turkey (and ham) and used it as my holder for the baked eggs

I put a 1/4 teaspoon of pesto in each cup and using a toothpick I swirled it around, this way there would be flavor in every bite

in the ham baked eggs, I put some chopped sun dried tomatoes and swirled it around as well

for the turkey I used artichoke hearts (all of the ingredients I had at home)

a little black pepper and this is how my tray looked prior to baking…no cheese for this recipe as I was keeping it really healthy!

I removed the baked eggs from the pan…the ham cooked up a lot better than the turkey as you can see from the photo, even with the same baking times

I had a soft yolk, so when I would reheat they would cook up again

According to my program from MacGourmet, each serving is under 150 calories, total fat is under 5g and protein is 13 grams…not too bad for a delicious and easy breakfast!  This healthy recipe for baked eggs is high in protein thanks to the mean and egg, low in carbs as there is no cheese or fatty meats.  I would not omit the pesto as you need it for flavor since there is no cheese but if you wanted to omit the sun dried tomatoes or the artichoke hearts that would be fine.

On a separate note:  for my other baked eggs recipe, I baked the eggs at 400 degrees at a shorter time, this time I baked them at 350 for a little longer and I preferred them this way as I wanted a softer yolk.

Healthy Baked Eggs

Ingredients

  • 6 large Eggs
  • 6 slices of Deli Meat (I did chicken and ham)
  • 1 1/2 teaspoons Pesto, divided by the 6 eggs (1/4 teaspoon each)
  • 3 Artichoke Hearts (optional)
  • 3/4 teaspoon Chopped Sun-dried Tomatoes (optional)

Directions

  1. Preheat oven to 350 degrees.
  2. Place a slice of meat in each cupcake holder, crack your egg directly into the deli meat.
  3. Place 1/4 teaspoon of pesto in each cup and using a toothpick swirl the pesto so that when it's baked through, each bite will have a taste of the pesto.
  4. Optional - add artichoke hearts to 1/2 of the eggs and chopped sun-dried tomatoes (in 1/4 teaspoon increments) to 3 cups.
  5. Bake for 18-22 minutes, if you prefer your yolks like a hard boiled egg than bake for 22 minutes. Enjoy!

Healthy Stuffed French Toast with Raspberries

Every year for Mother’s Day, my children make this healthy stuffed French toast with raspberries for me.  I found the recipe long ago, made some modifications and then asked them to make it, on their own, and I have loved it ever since.  My children usually use only fresh raspberries but you can add blackberries or strawberries as well.

This recipe is great because:

  • it’s such an easy recipe your kids can make it for you (or need minimal to make it)
  • the bread is placed in muffin tins creating little cups
  • the cups are filled with ricotta cheese instead of the traditional cream cheese, lowering the calorie intake
  • You can make the cups 1 day in advance by baking them, allowing them to cool down and placing them in container.  In the morning, just place them on a baking sheet and bake at 250 degrees for 4-6 minutes, just to take the chill off of them and then assemble
  • play around with the fruit as you can use raspberries, strawberries, blackberries or a variety
  • use real maple syrup

Whip the eggs with milk, honey and cinnamon

place the bread into a muffin tin and press gently into the muffin tin to form the cup, do this for each piece

bake and remove from the oven, meanwhile, in a small bowl  mix your ricotta cheese with orange zest

add a small amount of the ricotta cheese to each cup

add the fruit and serve

Stuffed French Toast

Not only is this recipe a little healthier than the traditional stuffed french toast, it also is beautiful when served.  Whether you make this for your mom on Mother’s day or just because, I know you will enjoy this recipe, especially if you are looking for something a little healthier…Enjoy!

Healthy Stuffed French Toast with Raspberries

Ingredients

  • 2 large Eggs
  • 1 large Egg (whites only)
  • 3 tablespoons Milk
  • ¾ teaspoon Cinnamon
  • 1 teaspoon Honey
  • 4-5 slices Sweet Egg Bread Slices, crusts removed
  • ¾ cup Ricotta Cheese
  • 1 cup Raspberries, fresh (or a variety of your favorite berries)
  • 1 teaspoon Orange Zest

Directions

  1. Preheat oven to 375 degrees. Spray a nonstick muffin pan with vegetable spray. Remove the crusts from the bread; using a fork, poke each slice of bread several times (this will allow the bread to absorb the egg mixture better), set aside.
  2. In a medium bowl, whisk the eggs and egg white together; add milk, cinnamon and honey, whisk again. Dip a piece of bread in the egg mixture and press the bread into the muffin pan. Bake for 12-15 minutes, until the bread is a little crisp, let the bread cool in the pan for 2-3 minutes before removing.
  3. While the bread is baking, mix together the ricotta cheese with the orange zest until smooth.
  4. To serve, spoon equal amounts of the ricotta mixture into each of the bread cups and top with berries. Drizzle with real maple syrup if needed. Enjoy!

Malibu, CA – The Malibu Cafe at Calamigos Ranch

Is there a better way to start the new year then laughing with friends, enjoying the sun and drinking “Bottomless Mimosa’s”?

Last Sunday I was invited to attend a small get together at the Malibu Cafe at Calamigos Ranch, since it was not my weekend with the kids, I figured it was good timing and I hadn’t been able to attend a lot of functions with this group.  I can’t tell you how happy I was to have gone, I laughed with this group, ate great food, sat in an great environment and it all just felt great!  I had never been to the Malibu Cafe at Calamigos Ranch and to be honest I thought it was a different location/place then what it was.  Nonetheless, I dressed appropriately for the event, especially by wearing flat shoes.  Ladies, the Malibu Cafe at Calamigos Ranch is an outdoor location and the ground is grass and don’t be surprised if you find wet muddy places, so please, please wear flats!

You will know you have reached the The Calamigos Ranch by the beautiful trees and amazing entry,

has a lot going on so pay attention when you pull into the driveway, this is the main entry, you do not want to end up here unless you are attending a wedding, you must go right

and go down the small hill where you end up on a dirt lot, the Malibu Cafe only offers valet parking, look how beautiful this is…

it was so magical to me, I loved the simplicity and elegance that the Calamigos Ranch offered.  I got there early and met with my two friends and began taking photos of the grounds, look how creative this was and it was bright and colorful!

so what do 3 friends do while they are waiting for others to arrive?  We take fun photos together, here we are throwing kisses

Others arrived and we did get seated, of course we immediately ordered our mimosa’s, here we are at the table, see how rustic it is?

We all ordered amazing food and the Calamigos Ranch offers enough variety to please everyone, here is what I ordered, it was the Beef Has with Fried Eggs, it was yummy!  If I ordered it again, I’d ask for the eggs to be a little more runny as to me that’s the best part, the yolk all over the meat and potatoes!

If you are coming out to Southern Californa and have time to visit the Malibu Cafe at Calamingos Ranch, I would recommend it 100%.  Plan on being there a while as service is slow but when you have such beauty around you, who really cares about slow service…that being said, if you are doing the bottomless mimosa’s you may need to encourage your server to visit your table often as only 2 girls did the bottomless and we had to call over our waiter for service.

Healthy Easy Baked Eggs

Hey there, I again have to apologize for the lack of posting.  For my friends and family, you all know there has been a lot of change going on in my life and for everyone else all I can do is ask for is patience until I get through the next few months.

Not only is there change in my personal life but I also have met with a nutritionist who changed my whole eating pattern so I’ve been on a strict “diet” but not really a diet just a change of food for my metabolism.  So basically I’ve been eating salmon, shrimp, salads some pasta and other grains.  I’m just figuring out some of my favorite recipes so look out for those!

As you all know, I love to make breakfast and do brunch…I love everything about breakfast from the coffee to the sweet and savory dishes.  I like to experiment with it all and try new things and yet I always try to to do my “tried and true” recipes as well.  The one thing I believe in in entertaining a group, is it’s great to have both the savory and sweet so everyone is happy and anything you can do ahead of time or that does not take away from me enjoying my brunch is even better.

One morning Kelsi and I were just hanging out and we were looking up images on Pinterest for egg dishes.  We had seen many recipes using bacon with eggs and then baked in a cupcake pan, so we decided to create our own recipe for healthy baked eggs by using what we had on hand (we did not have bacon on hand).

This is a great recipe for healthy baked eggs that you can make for a large group and as you can customize it to your own likings as well.  I only made six as it was all the eggs I had on hand but my cupcake pan can do 30.

So basically you take your baking pan and spray it, put your favorite deli meats (I used prosciutto and turkey as it’s what I had on hand) in the pan and cover the pan completely with the meat, 1 per each cup

and then we put the egg on top of the deli meat, yes that’s Kelsi helping me 🙂

This is a great dish to make if you are entertaining and you want something a little personal and unique.  It can be modified to your likings and can be made in large batches.  Your guests will love them, I promise!  Here is another recipe I did for healthy baked eggs!

Easy Baked Eggs for Company or Large Groups

Ingredients

  • 6 large Eggs
  • 6 pieces Deli Meats, your choice
  • 1/2-1 cup Cheese, I used 2 different kinds
  • 1/3-/14 cup Chives, optional
  • seasoning salt, to taste

Directions

  1. Preheat your oven to 400 degrees. While your oven is preheating, spray your cupcake pan with cooking oil.
  2. Take any favorite deli meat and put 1 slice per cupcake mold. Crack each egg separately and add them on top of your deli meat in your cupcake mold.
  3. Add seasoning salt and any favorite toppings (see above). Finish with chives and bake for 10-12 minutes, leaving the yolk firm and runny.

Amazing Apple Pie Granola Recipe

When September hits, immediately I crave apple pie, I love a good apple pie, especially one with ice cream…YUM.  While I know it’s not September…you need to know that I just couldn’t wait for something “apple”.  So, I had to make my apple pie granola.  I just love this recipe…and I love granola.  I can eat granola with some milk in the morning or some yogurt in the afternoon, as a snack and sometimes I eat granola as a little snack late at night.

You will find this granola recipe is very different then your traditional recipes as this one tastes like an apple pie.  It even starts out with apple juice that you concentrate, I’m not saying that this is a super healthy recipe, but it doesn’t use as much oil as some that I have made before.  I made this apple pie granola recipe yesterday and Kelsi came home and nibbled on some of it…she was so cute as she’s like “mom it feels like Christmas with this granola”, I think it’s all that cinnamon!

Traditionally I tend to use cranberries and blueberries, in this recipe I use dehydrated apples that I chop, it adds great texture.

So, I mixed my nuts with the seasonings

mixed my oatmeal, nuts, seasonings and chopped dehydrated apples in a bowl and tossed

I added the apple juice, oil and honey and tossed again

I placed it on my lined sheet and sprinkled my brown sugar and coconut on top

I baked it for 10 minutes and tossed…see how “wet” it looks?

Amazing Apple Pie Granola Recipe

Ingredients

  • 5 cups Old fashioned oats
  • 1/2 cup Pecans, chopped
  • 1/2 cup Walnuts, chopped
  • 1/2 cup Milk powder *
  • 1 cup Apple juice
  • 1/2 cup Oil
  • 1/4 cup Honey
  • 1/4 teaspoon Salt
  • 1 1/2 tablespoons Cinnamon, ground
  • 1/2 teaspoon Cloves, ground
  • 1 1/2 cups Dehydrated apples, chopped large
  • 1/4 teaspoon Nutmeg
  • 1 teaspoon Almond extract
  • 1 1/2 tablespoons Brown sugar
  • 6 tablespoons Coconut, shredded (I used sweetened and unsweetened)

Directions

  1. Preheat your oven to 350 degrees. Prepare a baking sheet with parchment paper and set aside.
  2. Place apple juice in a pan and cook on medium low heat until it reduces down to 3/4 of a cup. Once your apple juice reduces to the 3/4 of a cup, add your honey, oil, and salt.
  3. While your apple juice is reducing, put your granola, milk powder*, chopped nuts, seasonings and nuts in the bowl and toss. Add your apple juice, honey and oil.
  4. Once it's all well mixed, pour your mixed oatmeal onto your prepared baking sheet, add your almond extract. Add the brown sugar and coconut flakes and almond extract.
  5. Bake for 30-40 minutes tossing every 10 minutes and until it's done.
  6. *I forgot to add the milk powder, I'm sorry

100 Calorie Oatmeal and Banana Muffin Recipe

100 calories for an oatmeal and banana muffin?  That’s right, you heard it right, only 100 calories per oatmeal and banana muffin (according to my program)…how could you go wrong with that?  You see, I love my baked oatmeal casserole recipe and so I thought “how can I make a healthier option that everyone will want to eat?”…then it hit me, most people use applesauce instead of oil so maybe I could try that.  Until I went to the refrigerator and well, I didn’t have applesauce…but I always have bananas so I thought “why not try it” out and boy am I glad that I did.
