Apple Cider Cake Glaze

August 25, 2015 By Patty Limatola-Tanenbaum Leave a Comment

Here is a super easy cake involving apples and apple cider.  I loved this cake as it was simple to make and making an apple cider reduction gives the cake plenty of apple flavor.

I love apple pie, apple crumble, French apple or anything apple when it comes to a dessert and yet I don’t tend to make desserts with apples. When I worked in the commercial kitchen we would experiment by making apple cakes (which was more of a batter then a crust), I just never liked the ones we would make.

For the fall, I decided I wanted to try my own version of an apple cake so I created this recipe, I did use a few other recipes as guidelines and took the best of what I read to develop this cake recipe.

The key is the reduction of the apple cider, to reduce apple cider, take a cup of cider and cook it on the stove until it becomes 1/4 cup, here is the before

apple cider

and after

cider

I used granny smith apples as they are great for baking

apples

I shredded the peeled apples, the old fashion way using a grater, it was so much easier then pulling out the food processor

Grater

I wanted to wring out the extra moister so I  placed the shredded apple in a towel and squeezed as much of the juice out that I could, do not omit this step

Apples draining

beat butter with sugar until light and fluffy, then add eggs, one at a time, make sure it is mixed well

butter

In a separate bowl put “dry” ingredients (flour, baking powder, baking soda, apple pie spice and salt) and to cream add apple cider leaving the “wet” ingredients

milk

Just like I did in my blueberry cake, alternat adding adding 1/3 of dry ingredients, mixed until blended, add 1/2 of wet ingredients and mixed it up, add another 1/3 of dry ingreditents and mix, add all of the remaining wet ingredients, mix again and end with dry ingredients

batter

Add the shredded apple and zest from 1 lemon and mixed it by hand until everything was incorporated.  Don’t worry if your apple has some discoloration to it, it won’t matter once it’s baked up.

apple lemon

Put in an 8×8 pan, sprinkle with the cinnamon and sugar on top and baked it for about 50-55 minutes…YUM!

Cake Baked

Now for the glaze, while the cake was baking I did the same thing with the apple cider by taking a cup and reducing it to only 2 tablespoons.  I put the apple glaze in with confectioners sugar and used just slightly over 1 tablespoon of milk, if you like your glaze more runny add more milk and if you like a more thick glaze add less milk

Sugar

here is a photo of the mixed glaze

Frosting

Once the cake cooled off, slice your piece and drizzle some of the glaze on top (this can be optional as well)

Apple Cider Cake

I loved this recipe as you can see from my photo,  you do not see large chunks of apple or any apple at all, just looks like a cake.  The flavor of the apple is amazing, by reducing the apple cider, you intensify the flavor even more which helps bring out the apple flavor.

Apple Cider Cake

Ingredients

  • 1 cup Apple Cider
  • 2 cups Granny Smith Apples (I used 3)
  • 1/4 cup softened butter (4 tablespoons or half a stick)
  • 1 cup Sugar
  • 2 large Eggs
  • 2 cups Flour
  • 1 1/2 teaspoons Baking Powder
  • 1/2 teaspoon Baking Soda
  • 1/4 teaspoon Salt
  • 1/4 teaspoon Apple Pie Spice (optional)
  • 1/2 cup Heavy Cream
  • 1 Zest from a lemon
  • 1 teaspoon Cinnamon
  • 3 tablespoons Sugar
  • For the Glaze
  • 1 cup Apple Cider
  • 1 cup Confectioners’ Sugar
  • 1-2 tablespoons Milk

Directions

  1. In a small saucepan, put 1 cup of apple cider in and reduce it to 1/4 of a cup. Set aside to cool
  2. Peel your apples and shred them until you have 2 cups, put them in a towel and wring them until all moisture has vanished
  3. In a large bowl place your butter and sugar and beat until light in color. Add your eggs, one at a time until it's well mixed, mix for about 3 minutes
  4. In a small bowl add your flour, baking powder, baking soda, apple pie spice and salt (dry ingredients)
  5. In a measuring cup, measure out milk and apple cider (wet ingredients)
  6. With your mixer on low, alternate adding the dry ingredients first then the wet, ending with the dry until well mixed.
  7. Pour into your prepared 8x8 pan
  8. Prepare the cinnamon and sugar mixture and sprinkle that on top of your cake. Bake for 50-55 minutes or until cooked through*
  9. For the Glaze
  10. While the cake is baking, place the second cup of apple cider on the stove and reduce it down to two tablespoons make sure that it doesn’t evaporate too far.
  11. Place the confectioners’ sugar in a small bowl and add the reduced cider along with one tablespoon of milk and stir. Add more milk if you desire, but to it in small increments, this glaze should be thick but runny enough to drizzle off the end of a spoon.
  12. When the cake comes out of the oven, cool it to room temperature, cut into squares and drizzle a little glaze over just before serving. Enjoy
  13. * if you do not wring out the apples, there will be moisture and the cake could take longer to cook and may stay wet in the inside

Amazing Apple Pie Granola Recipe

August 10, 2013 By Patty Limatola-Tanenbaum 2 Comments

When September hits, immediately I crave apple pie, I love a good apple pie, especially one with ice cream…YUM.  While I know it’s not September…you need to know that I just couldn’t wait for something “apple”.  So, I had to make my apple pie granola.  I just love this recipe…and I love granola.  I can eat granola with some milk in the morning or some yogurt in the afternoon, as a snack and sometimes I eat granola as a little snack late at night.

You will find this granola recipe is very different then your traditional recipes as this one tastes like an apple pie.  It even starts out with apple juice that you concentrate, I’m not saying that this is a super healthy recipe, but it doesn’t use as much oil as some that I have made before.  I made this apple pie granola recipe yesterday and Kelsi came home and nibbled on some of it…she was so cute as she’s like “mom it feels like Christmas with this granola”, I think it’s all that cinnamon!

Traditionally I tend to use cranberries and blueberries, in this recipe I use dehydrated apples that I chop, it adds great texture.

So, I mixed my nuts with the seasonings

Apple Pie Granola - Nuts and seasonings

I took my whole dehydrated apple

Apple Pie Granola - dehydrated apple whole

and chopped it up

Apple Pie Granola - Dehydrated apples chopped

mixed my oatmeal, nuts, seasonings and chopped dehydrated apples in a bowl and tossed

Apple Pie Granola - tossed

I added the apple juice, oil and honey and tossed again

Apple Pie Granola - wapple juice

I placed it on my lined sheet and sprinkled my brown sugar and coconut on top

Apple Pie Granola - pre baking

I baked it for 10 minutes and tossed…see how “wet” it looks?

Apple Pie Granola - baking

10 more minutes…still “wet”

Apple Pie Granola - baking

10 more minutes…all done!

Apple Pie Granola - done

I let it cool off completely before I put it in my beautiful glass dish.

Sangria with Strawberry, Blueberry, Apple and Basil

April 19, 2013 By Patty Limatola-Tanenbaum Leave a Comment

If any of you have been to my house, you would know that while I could make a great meal…making the cocktail to go along with it is not my thing.  That being said, I can open a great bottle of wine or even take the cap off of a beer (lol).  I do enjoy the drinking a cocktail part, just not so good at making it.  Today I was having a special friend come over for lunch and I thought I’d make a drink to go along with our meal.  Being that it was a luncheon, I didn’t want anything too strong…let me tell you this…the menu planning was much easier then the drinking menu!

I do like drinking sangrias so I thought why not make a simple sangria but maybe not a traditional sangria…I found this recipe on the web and while I did change it a bit, I can not claim it as my very own as I would never have thought of adding basil in this drink but “OMG” did it make the drink complete.

For those of you challenged or not challenged in making drinks, this is a pretty simple and tasty drink.  I would recommend making this the night before you serve it or early in morning.  Basically you cut up all your fruit, I used chopped apples and strawberries and placed them in your pitcher, pour your wine and sugar water on top, add your grape juice and then chop up your basil and placed that on top as well.

Sangria

here is a side view

Sangria before

I then stirred it up

sangria after

doesn’t it look pretty already?  I covered it with saran wrap and placed it in my fridge.  Just before my friend came over, I added sparkling mineral water and blueberries and stirred it up, I then poured over ice and served!

how inviting is that?  From sitting in the fridge over night it turned into this beautiful color, a little girly and perfect for my luncheon!  It was so delicious and the perfect drink for summer…let me know what you think!

Here is a shot of my table, prior to platting our salads…

Sour Apple Caramel Cookie

November 3, 2012 By Patty Limatola-Tanenbaum Leave a Comment

There is always that special feeling you get when walk in the door and you smell an apple pie baking in the oven…a warm apple pie immediately gives you a sense that a house is a home.  These cookies do just that, they transform your house to a home!

This cookie has it all, it tastes a little sour, very sweet and a little bit like that “caramel apple lollipop” you grew up loving.  I know you know the one I’m talking about…that sour green apple, caramel lollipop?  So, I was looking for a new recipe to try, something that felt more fall like and voilà…bam…here it is.  I read a bunch of recipes and ultimately modified a recipe to make it my own.

The only change i would make on these is the caramel, I think next time I’ll cut the caramel into tiny pieces and throw it in the dough this way you get a bite of caramel in every bite you take.

Sour Apple Caramel Cookie

Ingredients

  • 1 cup (2 sticks) of butter, softened
  • 3/4 cup sugar
  • 3/4 cup brown sugar
  • 8 (4 oz) packs of apple cider powdered mix
  • 1 teaspoon cinnamon (I did a heaping teaspoon)
  • 2 large eggs
  • 1 tablespoon vanilla extract
  • 2 3/4 cups flour
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • Bag of soft caramels

Directions

  1. In a large bowl, cream your butter with both the brown and white sugar. Beat for 4-5 minutes. While it's beating, in a small bowl, place your apple cider powdered mix with your cinnamon and put aside. And in a medium sized bowl add your flour, salt and baking soda, place that aside as well.
  2. To the creamed butter/sugar mix, add your eggs, one at a time and then the vanilla extract. Once it's completely mixed. Add the apple cider powder mix and mix until well blended. Add the flour mixture and mix until it's well mixed.
  3. Place in the refrigerator for 1 hour. While the dough is in the refrigerator, start unwrapping your caramels, I would then cut them into bits.
  4. Preheat your oven to 350. Fold your bits into the dough and scoop out, I did 36 cookies using my scooper. Bake for 10-12 minutes or until lightly browned.
