Homemade Granola Bars

Here is a great recipe for a homemade granola bars, it’s great because it’s homemade and you can alter the recipe to your likings, modify how much sugar goes into this recipe and change it up with different dried fruits/nut.  As you know I love homemade granola and I love experimenting with flavors, although sometimes I tend to gravitate to the same ingredients, here is another recipe for granola bars.

I wanted to try something different for this recipe so I used fiber cereal making the granola bars a little healthier…I loved the texture/flavor the cereal added.

A few things to mention about this recipe:

  • Play around with the ingredients, just use same quantities for example, you can substitute pecans with banana chips or replace the dried blueberries with pineapple
  • If you cover the baked granola with saran wrap and then place it in a plastic bowl, it will be more of a granola than a bar
  • You can break up the granola and use on parfaits, in yogurt, on ice cream or take it on a hike with you

This recipe is similar to my last recipe for granola bars except I used fiber cereal to add a different texture, I also used dried blueberries, cranberries and shaved coconut

Ingredients

Melted brown sugar with oil and corn syrup

wet ingredients

Pour warm mixture over the oats, mix

mixed

whip egg whites, until frothy

egg whites

mix into the oats, place mixed oats into the prepared baking pan

prebaked

bake until golden brown

baked

let the granola cool completely before slicing

This is just a great recipe to make and have around to snack on!  I found these bars were more of a moist granola bar so ultimately I broke the bars into small pieces and used the granola for my yogurt or just to snack on, it was delicious.  It’s a great recipe/snack to bring on picnics as well.

I would recommend putting parchment between the bars as they can be sticky from the honey (you can see that in my photo above).  Play around with the ingredient list to make these granola bars your own!

Homemade Granola Bars

Ingredients

  • 1 1/2 cups Old Fashioned Oats
  • 1 cup High-fiber Cereal
  • 1 cup Nuts of Choice, chopped (pecans, almonds/walnuts)
  • 1/2 cup Dried Blueberries
  • 1/2 cup Dried Cranberries
  • 1/2 cup Coconut, shredded
  • 1/4 cup Pumpkin Seeds
  • 1/4 cup Sesame Seeds
  • 1/2 teaspoon table salt
  • 1/4 cup Light Brown Sugar
  • 2 tablespoons Honey
  • 2 tablespoons Light Corn Syrup
  • 2 tablespoons Coconut Oil
  • 1 teaspoon Vanilla Extract
  • 2 large Egg Whites, whipped

Directions

  1. Preheat oven to 325 degrees, prepare an 9x13 pan by spraying it with vegetable oil and lining it with parchment.
  2. In a medium bowl, mix together the old fashioned oats, fiber cereal, nuts, dried blueberries, dried cranberries, coconut and salt.
  3. Microwave the brown sugar, honey, corn syrup, coconut oil and vanilla in 30 second intervals.
  4. Pour the warm honey mixture over oat mixture and stir to coat.
  5. Whisk egg whites and stir into oats mixture.
  6. Press into the prepared baking pan and bake 50 minutes or until brown. Cool completely in pan on a wire rack (about 45 minutes) before cutting. Enjoy!
