I have made this recipe for stuffed pasilla pepper super simple by using leftover quinoa and then adding fresh shrimp! A few weeks ago I shared my quinoa with grilled vegetables recipe with you, it had quinoa, roasted tomato, mushroom and onions. I love jicama and jicama salad, I was first introduced to it by a live in nanny. I remember the first time she asked me to buy it, I did not even know what jicama was, then when I did buy it, she had to clean it. I was very intrigued as she would eat the jicama with only lemon and salt…I loved it!

Growing up on the east coast and in an Italian household, I never heard of Cinco de Mayo or indulged in the celebration of the day. As an adult and living in California I can say when the end of April approaches, “Cinco de Mayo is in the air”! I recognize that it’s still a few weeks away but I also recognize that May 5th is right around the corner.
