I just love summer and summer salads!  If you are looking for a Mediterranean style salad that has olives, tomatoes, lettuce and grilled vegetables, served on a pita, look no more, I have the perfect recipe for you!

Last week I received a new toaster oven and I had to try it out so I went out and bought flat bread (ready to bake and enjoy).   I had already made the roasted vegetables and I had the homemade Greek salad dressing so I was set to go!

Here is the toaster oven…

What I love about the toaster oven is that it is larger than most and has infrared heating, meaning no preheating is necessary and cooks food faster.  I love the digits on the side that help with mealtime.  So I put my bread in the toaster oven and cooked it according to the package instructions

meantime start building your salad, I used a mixture of arugula and spring lettuce

to make it more of a Mediterranean salad I chopped up some olives and added those (I used kalamata and herbed olives), you can use any combination you’d like

added chopped tomatoes

added grilled vegetables

some feta

tossed it together and layered the Mediterranean salad on the slightly warm pita

This salad was divine!  I loved the combination of grilled vegetables with the tangy olives, the sweet tomatoes, and the pita bread made this the perfect side dish, entree or even an appetizer.
